Paloma Mínguez Rosé

Appellation of origin: Brut Organic Cava
Aging: In 12 month bottle
Variety: Garnacha

Pale pink cava, very intense and with great aromatic complexity. The nose offers primary aromas, characteristic of a delicate rosé cava, showing the subtlety of violets and roses in combination with ripe red fruits. In the mouth it is soft, very creamy, fresh and elegant. Creamy texture, broad and persistent in the mouth. Balanced acidity with slight hints of rye bread and a long finish.

Vineyard age

20 years in the municipality of Requena (Valencia). We work with organic viticulture, always seeking healthy and balanced grapes. With good acidity. An excellent raw material.

Soil type

Clay

Vinification

Cold maceration for 6 hours to extract primary aromas (terpenes). Gently pressed, leaving only the noblest fraction of the must to achieve the finesse that this cava expresses. Two fermentations at low temperature, 16 ºC, the first (in stainless tanks) and the second (in bottle), seeking a fruity and floral aromatic range so characteristic of this Valencian cava. The expedition liquor that we have used has been made with the same base wine with which the second fermentation was carried out, seeking to respect the original characteristics of this cava.
