Paloma Mínguez Bobal

Denomination of Origin: Valencia Variety: 100% Bobal from old vines Certified organic and vegan Age of the vineyard: 40 years on the El Ardal plot located in Camporrobles (Valencia). Mediterranean climate with continental influence. They work with organic viticulture and with low yields of about 30 Hl/ha. Always looking for a healthy, ripe, and balanced grape. An excellent raw material.

Paloma Minguez Bobal is a hedonistic wine, very appetizing and tasty, fresh, sweet and fun, a “enjoyable” wine, made with high quality organic grapes, and a lot of respect for its typicity. A great wine with an unbeatable quality-price ratio.

Soil type

Very active, well aerated, with high cation exchange capacity, clay-sandy with a large amount of stone on the surface. Vintage with a mild autumn, followed by a winter and a spring with good rains that allowed a correct sprouting and with a somewhat dry and hot summer, although at the end of it there were great thermal amplitudes between day and night that allowed the harvesting of the fruit at its most optimal point of ripeness and with exceptional organoleptic conditions.

Vinification

Selection of bunches upon entry into the winery. Long production with cold pre-fermentation maceration, brief alcoholic fermentation at low temperatures and a final phase of post-fermentation maceration with its skins. After this stage, the wine undergoes malolactic fermentation in French oak barrels and ages there for up to 6 months. Finally, the clarification, stabilization and filtering processes are carried out in the most respectful way possible, to preserve its characteristics as much as possible once bottled.
