Variety: 100% Cencibel (Tempranillo) de cepas viejas Age of the vineyard: From 40 to 70 years old, in different areas and municipalities of Castilla La Mancha such as Las Mesas, Pedroñeras, El Provencio, San Clemente and Villarrobledo. ¡Ea! It is a hedonistic, pleasant, fresh, sweet and fun wine, a wine to enjoy, made with a high quality grape, and enormous respect for that raw material, always seeking typicity. A great wine with an unbeatable quality-price ratio.
Soil type
Limestone and calcareous clay, poor, stony, loose and well drained. Add in a very dry summer, with several extreme heat waves. As a result, very early harvests, a very low production, of high concentration and which, thanks to the low yields, has preserved freshness and tension. Harvested at the beginning of September, at the optimal time of ripeness for each plot.
Vinification
Prefermentary cold maceration for 4 days at 12ºC to extract aromas. Fermentation at 25 ºC in stainless steel tanks with native yeast, seeking respect and the typicality of the raw material. Spontaneous malolactic fermentation in stainless steel tank.
Aged
Aged in French and American oak barrels for about 6 months.
