Vineyard age

30 years, on a single 0.9 ha plot. At 1080 m altitude. Organic viticulture, always looking for healthy, ripe, and balanced grapes. An excellent raw material with very good acidity.

Soil type

Clay-calcareous, stony, poor, fresh, loose and well drained. Harvested by hand on August 26, at the optimal ripening moment of the plot. Vintage with a rainy spring and warm summer, which significantly brought forward the harvest to maintain freshness.

Film maceration in the press for 8 hours.

Fermentation with native yeast at 16ºC in stainless steel tanks and later in Stockinger barrels with ultra-light toasting. 60% of the wine has been aged in barrels for 8 months with weekly battonage, the other 40% in stainless steel to keep the fruit with battonage every 15 days. The classic returns, one of the white wines that dazzled Spain, the Chardonnay Manuel Manzaneque, in tribute to D. Manuel who began making it in 1992.
