Description

Appellation of origin: Cava – Ecológico Brut Variety: Garnacha. Age of the vineyard: 20 years in the municipality of Requena (Valencia). We work with organic viticulture, always seeking healthy and balanced grapes. With good acidity. An excellent raw material. Type of soil: Clay Vinification: Cold maceration for 6 hours to extract primary aromas (terpenes). Gently pressed, leaving only the noblest fraction of the must to achieve the finesse that this cava expresses. Two fermentations at low temperature, 16 ºC, the first (in stainless tanks) and the second (in bottle), seeking a fruity and floral aromatic range so characteristic of this Valencian cava. The expedition liquor that we have used has been made with the same base wine with which the second fermentation was carried out, seeking to respect the original characteristics of this cava. Aged in bottle for 12 months. Pale pink cava, very intense and with great aromatic complexity.
